Courgette Soup with a Kick(optional)


Preperation <10mins, Cooking 20-30mins

1Kg diced Courgette, 500g diced potatoes, 1 large Onion, 3 Garlic Cloves, 2-3 tbsp of freshly chopped herbs (your choice of taste, i used Rosemary, Basil, Thyme and Chives), 1Litre vegetable stock, Salt & pepper to season and one optional sliced chilli


Gentley sweat the onons, garlic, fresh herbs and potatoes for 5 minutes in olive oil, add the courgette & herbs, cover with the stock and bring to the boil. At this point you can add the sliced chilli if you wish, add a good pinch of salt and pepper and simmer for 15mins.

Allow to cool then blend the soup in a food mixer, once smooth soup can be reheated as needed and kept in the fridge for 4-5days.

The soup is nice served with a sprinkle of parmesan cheese and some fresh rosemary bread.
